OK, they don't always crackle, but they sure are tasty. Theres a big batch of these cooling on my counter right now. (Minus the 3 or 4 I took to have with my tea of course!)
1 cup fat (I use butter)
1 cup brown sugar
2 cups flour
1/2 tsp b. soda
2 cups rolled oats
1/2 cup water
2 cups coconut
1 tbsp vanilla
Pour warmed water and vanilla over the oats. Cream butter and sugar and then add the damp oatmeal and the rest of the ingredients. Work with your hands until all ingredients are incorporated. Either roll into balls (1 inch) and place on cookie sheet, or use a small scoop and place on cookie sheet. Flatten these slightly and bake at 350 for 8-10 minutes. Cookies should be golden coloured and slightly browned around the edges.
