I posted this on FN a while back & thought with cold weather comming some of you here may like to try it!
This is one of my favorites with baked chicken.
Root Vegetable Mash
3 pounds sweet potatoes, peeled& cut into small chunks
1 pound celery root, peeled & cut into small chunks
2 cloves garlic
1/3C. milk, warmed
1 1/2Tbsp. olive oil
1/2tsp. salt
In a large saucepan, combine the sweet potatoes, celery root, & garlic. Add water to cover. Cover & bring to a boil over high heat. Reduce the heat to medium-high. Cook for 20 min., or until the celery root is very tender when pierced with a fork. Drain & return to the pan. With a potaoto masher, mash into a coarse puree. Add the milk, oil, & salt. Mash to blend.
