I once did the 500 cold oven method from Food 52 about 10 years(?) or so ago. Smoked me out of the house, so now I never go past 450.

Yeah same here. Then I learned you need to thinly slice up some potatoes and line the bottom of the pan. No more smoke. Just delicious chicken.
