I don't normally do St Louis cut ribs but the store had them on sale. Seasoned them with some Rufus Teague spicy rub

Ribs after approx 1.5 hours and just before foiling

let the ribs cook for about another hour foiled. Also added some wings that were rubbed in Mad Hunky Hot Chicken Whang rub

Added some Sriracha fries on the Performer

Out of the foil and cooked them direct for a couple of minutes on each side then moved the ribs indirect and applied two coats Rufus Teague Touch of Heat BBQ sauce

Ribs sliced

Tossed the wings in some Franks and butter

Plated
