Salad suggestion needed

I’m planning a small party of about 20-25 people. Chinese food. Soup. Egg rolls. Chicken and beef. White and fried rice. Almond cookies.

The one thing I’m missing is salad. I am not a veggie person and could happily survive without one. But afraid at least some of the guests won’t.
Thus I need suggestion what would an appropriate Chinese style salad.
Please help.
 
Cold peanut noodle salad with Chinese veggies.

It was a HIT at our Fourth of July party.

Ill try to find the recipe I used ….
 
Thank you J, it looks good but I can't eat cold noodles. Just one of those things in my head, I won't serve it either.

Looking for more vegetable style salads.

Not this particular one, but I have made salads with the same or similar dressing ingredients, so we would definitely enjoy it. I would replace the jalapeño and garlic with Chinese chili-garlic sauce, though.

Thank you, thank you everybody. I think I am going to use recipe GG suggested. The ingredients fit the tastes of the people that are coming, or at least majority of them. All i have to now figure out how much to make.
