Salmon Burgers

This is the recipe I use to make salmon burgers. When form it into patties, it falls apart. Please tell me why.

1 14.5 ounce can pink salmon
1 egg
1 tsp onion powder ( I do not like onions)
1/2 cup season dry bread crumbs

Drain and reserve the liquid from the salmon
Mix eggs, onion powder, bread crumbs and salmon together. I add 2 half ladels of the salmon liquid because it was too dry.
 
I'd add another egg instead of the canned liquid... and be sure to cover and refrigerate the mixture for at least a half hour so the breadcrumbs can hydrate.

this is the secret to many breaded things.

Crab cakes, salmon cakes are all extremely delicate things and must be handled very carefully.

Your mixture actually sounds pretty good - just kid-glove handling perhaps.
