I don’t have any problems making biscuits that aren’t gooey. It’s just last time I was aiming for cookies (gooey in the middle) as the boys had requested them. I might like them if they didn’t contain so much sugar but it’s not possible to achieve that with a lower sugar content so they’re out! 😂
But if it's for your now grown sons, what does it matter if they have a higher sugar content? You aren't the one eating them!
 
Both. One of our friend's is for sure celiac and 2 say they are but aren't but I don't question them. we don't make pizza at work but have made focaccia and brioche and it meets our standards, but probably won't start making them until late spring summer when the tourist industry ramps up. Apparently gluten effects people in cities much more than country folk, it's an anomaly :LOL:
I know, one of my husband's cousins is married to a lady who swears she is celiac (though never been diagnosed), but she makes lasagna a couple of times a year for family gatherings and I see her eating it, and I know damn well it isn't gluten free pasta in there because her husband told me so. When I asked him about her gluten sensitivity, he gave me an eye roll, so...
 
A lot of gluten free also use nut and oat flours, tapioca starch and xanthan gum which can add some decent fats, protein for strength and makes it less crumbly and adds texture which makes the bite more substantial. I find GF very sandy, like shortbread, which is fine but not really comparable to a normal cookie. That's what I've found in the past.

Take some sugar out of GF makes it pretty dry. You have to remember sugar adds color when cooked, helps spread the batter because it melts and sugar is hydrophobic which helps retain moisture, which translates into a softer and more chewy product than a GF cookie. Sugar is very important in baking for the most part.
Appreciate the input but I can assure I could give a masterclass in the ingredients gluten free flour contains and recipe adaption including which flour to use for what. I’ve been around the block more than a few times.

I stopped making biscuits about 20 years ago due to what I would describe as the brick dust taste, if it doesn’t pass a normie’s lips as ‘good’ I’m not interested in it 😂
But I would try again every now and then when a new flour appeared on the market, only to be disappointed.

Caputo GF if hydrated correctly and other ingredients adjusted works for everything, including biscuits, it is like most GF flours naturally drier and Caputo is a particularly thirsty one.

It is a very good GF flour and the others really don’t come close. It can create a pizza base that has everyone questioning whether it’s really gluten free (for anyone needing it then follow the Ooni website recipe GF pizza base recipe).

This is because unlike other GF flour it contains some de-glutenised wheat. So it behaves and tastes similarly to normal plain flour, of course in some recipe’s you’ll need help from extras like xanthan gum.
It is an expensive process to remove gluten from wheat so Caputo GF is more than double the cost of other GF flours.

As for townies having more coeliac disease thats credited to socio-economic factors and access to health care than it is the actual prevalence of the disease. No surprises there!

Little fishies? Like homemade Goldfish crackers?

Edited to say that I am not even sure that they have those over the pond (LOL that little fishies swam across the pond).

Followed with I do care about the fishies, so instead the cookies can roll off the edge of a dust cart into landfill for all I care.

See sometimes my mind’s busy frolicking on insanity beach while I’m using it to type, and I let it fly, but a bad habit when it connects to my fingers and ends up in a post and you have to spend time trying to decipher wtf that meant 😂

A garbage truck. Or more accurately the little carts with brooms on them that men used to wheel about picking up litter and cleaning the gutter with.

All the peasants who had to work serving the upper middle and upper classes on Christmas Day were allowed a day off to go and see their family.
It was to allow one day where the hoi polloi would all be able to get together without spoiling the ruling elites special day.
They were given the leftover food that wasn’t wanted (literally the crumbs from the table?!) which if you’re on a servants wage was probably very welcome.

In British English, the word "dust" used on its own refers to the tiny particles on furniture Taxy, like "doing the dusting", or "dusting furniture", but when it's used together with the word "bin" - dustbin- it's a container for rubbish. 🙂

What @Meryl said would be our go to words for a garbage truck.
Bin lorry is the most usual choice.
A dust cart can mean a garbage truck too. It also can also mean the little road sweeper vehicles that clean the gutters although more likely to be called a road sweeper, it can also mean the men that go along with a cart cleaning the streets.

It derives from old language describing men on horse and carts who came to collect your coal dust.
