Here's the recipe...it's absolutely delicious as written but I used 4 thighs and about a pound of thin sliced little Yukon Gold potatoes. Be sure to spray the rack and pan with Pam. I did not remove the bones. All the goodness from the thighs drips into the potatoes and onion. Delectable.
