It is supposed to be a cool, overcast weekend and I have been in the mood for something a little spicy. I cooked up a vegetarian chickpea curry. My intention was to save it for tomorrow (overnight in the fridge improves the flavor) but it ended up being an early dinner.

This is one of my favorite recipes and makes enough for 3 or 4 meals.

Took a day trip to Plano, TX today. Visited Ham Radio Outlet, and just enjoyed spending time with Mrs. Boss. We drove by the Southfork ranch...you know the TV show...who shot JR. We decided not to stop, looked like a tourist trap.

We were both tired by the time we got home so we just ordered pizza for delivery.

You were just blocks away for Lockhart's BBQ, one of my favorite places, in Old Downtown Plano.

Southfork Ranch in Parker is definitely a tourist trap. They probably do weddings where you can get married by a JR Ewing impersonator. :ROFLMAO:

The original SFR in Frisco burned down the first season of the show, and they moved to another location in the same county. The original is now Brinkmann Ranch, owned by the owner of Brinkmann BBQ grills and smokers (not top quality gear). It is a few blocks from my house, and is a 3,000 acre working cattle and horse ranch.

If you come back, give me some advanced warning, and I may be able to meet you for some lunch.

A couple of pizza slices my FIL's wife brought me over this morning, that she had made, and then some of the stuffed aubergines I had baked for lunch. Very simple, I just cut them in half lengthwise, made incisions in the pulp, placed them on a baking tray and let them cook in the oven for about 15 minutes. Then I scooped out the pulp and added it to a breadcrumb mix I had prepared using left over bread (previously soaked), chopped red and yellow "datterini" tomatoes, EVOO, oregano, chopped onion, salt and pepper. Then filled the aubergine "boats" with the stuffing, another round of EVOO on the top and then just a few minutes under the grill of the oven. I could have added other ingredients like cheese but I wanted to keep the dish light and as healthy as possible. 😁

One of my most favourite dishes! Stuffed with shrimp was the first I had ever made, although have made many different kinds since the shrimp one remains my favourite.
