Tried a new recipe. Mixed everything and put it in the oven. Except for the butter. I forgot! I pulled it out, and the only thing I could think of was to pour some oil over the top and mix in with a fork. Wish me luck.

Butter and oil will result in slightly different textures and flavors but it should be quite edible.

It worked. Small bit of oil that didn't mix in completely, gave the top a nice crunchy texture. Cornbread itself was very good. Have to do it again this way.
