During the fall rutting season which coincides with hunting season, most game will have a gamey taste. A good wild game cook knows how to prepare it. My mom was pretty good at it, but never having had anyone else's can't begin to say.

Yeah, the venison I had was prepared by someone else. I mean, it wasn't horrible or anything. I just didn't like the flavor very much.

I've had Bison, though. That's pretty good. Had an awesome Bison burger in Michigan once.
 
There was a Bison ranch/farm near me in Quebec - was always available at the local markets. Not much fat on it, tasted almost like beef. Not sure if I could possibly tell the difference but that holds true with venison as well. There are subtle differences of course, but I'm not expert enough to find my way thru any seasonings to tell.
 
Don't know why exactly but not a fan of elk, venison for sure. A good friend who bow hunts just gifted me a lot of venison, he does every year. He had 2 tags and the last 8 point buck was a few days ago and the last day of bow hunting where only shotguns were allowed after that.
 
It's deer-gun season here in Ohio. Perhaps now we'll see fewer deer lying on the side of the road. It breaks my heart to see that and, this time of year, they're everywhere. Even on the freeways.
 
I would much rather see them in a freezer than dead beside the road or to watch them starve over the winter. :(

As for their flavor, I received a dressed deer that had thoroughly enjoyed my friend's corn crop all summer. The flavor was amazingly like beef. Then I had another that had gorged on acorns, etc. all summer - that one was pretty gamey.
 
I have never noticed a gamy flavour to venison. I have a theory about that. Imagine a group of people go to shoot some cows. For the sake of this example, it is okay to shoot the cows for meat. So, a few cows get shot. The "hunting" crew stands around taking trophy pictures of each other holding up the dead cows. Eventually they get around to gutting and bleeding the cows. Once that's done and the vehicles are packed up, they strap the cows to the hoods of the cars and drive home a few hours. I'm going to guess that the meat on those cows will have that special gamy flavour that some people prize. Yuck.
