CD : posted his "Texas chili " recipe and a fine looking chili it is !!!
not being a fancy chef/cook i thought ( some ) of you folks might want to hear how i make my chili quick and easy
brown 1 lb hamburger meat and drain chop a med onion (cook the onions with the hamburger meat) then in a nice big pot dump in 3 cans chili beans ,3 cans tomato sauce
before adding the hamburger/onions
put the hamburger meat back in the hot skillet and add chili powder straight from the spice bottle add enough so that when you add a dab of water to it , it will look kinda like your making a rue
after that simmers for about 5 minutes
, add it to the beans and tomato sauce
and put it on a low to med heat and cook for anywhere from 30 minute's to 2-3 hours its up to you !
its not a fancy chili and i don't know what state it hails from
but add some corn chips in your bowel when you eat it and it will keep you warm on a cold day
oh and before someone asks how much chili powder
as much or as little as tastes good to you
 
I've heard that Texans do not put beans in their chili. I guess Colorado folks do!

BTW, you may have seen the name "Chile Colorado" before. That is a lot like "Texas Red" Chili, but it is the Mexican name for it. "Colorado" just means "colored red. It's not from the state of Colorado.

Looks okay to me. Chili served on corn chips is called Frito Pie down here.

Also, as a guy who makes his own sausage, you might want to make your own chili powder. It is easy to do, and has a much better flavor.

I make a bunch at a time, and put it in an airtight container to use over the next six months, or so. The whole job takes me less than 30 minutes by myself.

i have thought about buying a pepper grinder and a mortor ? to tinker with spices , not sure why i haven't done it

I use a food processor to do a rough grind on my dried peppers, then use a cheap Krups coffee grinder to refine it into a fine powder. Unit through a sieve to get any pieces that didn't become powder, and it's done.

A rue like how darkly you brown flour/oil when you make Cajun food like gumbo/jambalaya?

Chili looks awesome. Just like my mom used to make, and also 9 times outta 10 like I make it! I love it on the second day as Chili dogs. Chili dogs are soooo good ughhhhh.
