I put this in the "Game" section but goat is farm raised and I think the most eaten meat in the world. (Just not in America).I had it made with beef the first time but I prefer the goat meat.Most mexican markets will have goat meat. No supermarkets near me carry it.

5-6 lbs bone in goat cuts.(ribs,shanks etc.)
4 yellow onions sliced
32 oz can of good enchilada sauce (the shortcut)
1/2 bottle of red wine (you can figure out the other half)

Diced onion and chopped cilantro for topping.


Season goat and brown in oil.Remove goat
Add onion slices and soften.
Deglaze with wine and enchilada sauce
Add goat and slow cook for at least 4 hours or until you can pull the bones out easily.
Remove bones

Serve with corn tortillas and top with onion cilantro mix.

Also good over white rice
 
I would love to spring this dish on my step-kids without their knowledge. But they about died when they found out they had eaten roast lamb! Some people are just meant to eat white bread!

You don't have to use goat.I am actually making this with pork today.I went to the freezer to get some goat and it was late,the pork was on top and I didn't feel like digging any deeper.Beef or Lamb are fine too.
