Simple Pound Cake

Amount Measure Ingredient -- Preparation Method

1 pound confectioner's sugar
4 sticks margarine -- softened*
6 eggs -- room temperature
3 cups all-purpose flour
2 teaspoons vanilla
Combine all ingredients and beat on high speed of electric mixer until smooth and fluffy. Pour into 3 greased and floured loaf pans. Bake at 350 F. for about 45 to 50 minutes or until tests done.
Makes 3 loaves

NOTES : *I use a good margarine such as Imperial. This is the best pound cake recipe...so quick and easy to mix up, and the texture is wonderful! Good sliced with some sliced canned peaches spooned on top and a dollop of whipped cream. Or with strawberries!
Additional note: Update on margarine....I use butter now....too much water in margarine! Butter is better!
