@cooking-on-crutches Here's a recipe that sounds marvelous. Slow Cooker Chicken & Dumplings . I sure hope you have a Slow Cooker! Although you could adjust it for braising in the oven too!

I have not tried it but I will be soon. I will probably be using not only breasts but thighs as well.
I recommend it for you as there is no "pre-cooking/browning/searing of any sort. No extra pans to wash. You just dump all the ingredients in.
Yes, this uses canned soup but under the circumstance, who cares? You put a hot and delicious meal on the table.

I also don't know how many people you are feeding. But that is easy to adjust quantities. As long as you remember your slow cooker must be at least 1/2 to 2/3rds full in order to work efficiently and safely.

I love my slow cooker but I find it annoying that many recipes aren't really saving you work as you need to do all the things you normally would to standing around and starting supper. Then you also end up with the same amount of pots to clean. So this one sounds really good!
 
I saved it and I'm gonna make this soon. So simple, very few ingredients, not much effort... perfect. Just what I like.
