I still need to fix my pellet smoker. Those darned round tuits have been pretty scarce lately.

I couldn't get the pellet smoker to work, but I bought the Cabella's "Gear Guard" insurance for my pellet smoker, so they are going to replace the whole smoker. :clap::clap::clap:

I just have to get it there, and bring back the new one. :unsure:

How far do you have to go to get the new one?

Only about fifteen miles. I rented a pickup from U-Haul for tomorrow. I will have it for 24 hours, so I have a list of things I need a pickup truck for, and the total cost should be less than fifty bucks.

Any hints for crackly crispy skin that isn't tough and leathery
High heat crisps the skin. Spatchcock, rub with avacodo oil, then add your favorite rub. (Mine is BBQ Spot's Rub Some Chicken.) Smoke at 450* for ~1 hr, 40 min. I like to pull when they hit 170-174*. Then let it rest. Or, you can smoke at 325* to get a little more smoke, but then crank the heat for the last 30 minutes. Chickens turn out amazing, with crispy skin.
