Sunday March 16, 2025 - What's for Dinner?

We went to a calzone, stromboli, pizza class with friends and their daughter. The food was fabulous and fun to make. Here is a photo of the stromboli that the daughter and I rolled up! There was no sauce within. But we made a delicious sauce to dip it in!

Stack style enchiladas, blue corn tortillas, beef, onion, cheese, hatch enchilada sauce. Rice and beans. Chips and queso.

From scratch Mac and Cheese. I had some mushrooms left from another meal so I included those, too.

We had lasagna tonight.

I heated some of the white bean and Italian sausage soup. I cracked an egg into it while it was heating. I have poached eggs that way before, but I have always put a layer of shredded cheese, usually Parmigiano Regiano, on the soup first. It matters. The egg sunk and I had a hard time telling when it was done. Oh well, live and learn. it was still fine. I had some toasted rugbrød (Danish style, heavy rye bread) with that.

Mr blissful's birthday today, 74! We finished out the day with big meal sized salads and pieces of dark chocolate.

Steamed mussels #2 with Pernod and Cream, with rice and extra sauce. Fantastic! Thinking of you my friend! One of your favourite meals. Miss you RIP.

Still have another serving of mussels - tomorrow date is the last, tough job but I can do it! Have a Spicy Asian Steamed Mussels in mind.
