As we all know, according to the old saw from the last century, real men don't eat quiche. So I make an egg dish that's like a quiche without a crust. I call it a frittata for the reason above ;) and that I am too impatient to make a crust. Of course, if I'd added potato, I could have called it a Spanish tortilla.
