But I think his dry vermouth also had gin with it

Ok, here you go, this is from the Kitchen of the current Troisgros Brothers where Michel the son duplicates this dish.

I used to buy sorel all the time, mostly to add to salads. I used to get it from Lufa Farms, my produce basket place. But, they quit carrying it for a few years ago. Today, as I was making the final adjustments to my order that will be delivered later today, Tuesday, I noticed that they have sorel again. I grabbed some quick. This is the pretty kind with red veins.

LOL, I used to grow sorel in the herb garden eons ago. Never used it but had to grow it... just in case.
