Sydney-Sider Grilled Whitefish-Nectarine Skewers
1 1/2 lbs Thick fillets of firm white fish
2 Fresh California nectarines, cut into large cubes
2 tbsp Olive oil
2 tbsp Lemon juice
2 tbsp Apple juice
2 tbsp Rubbed sage
4 tsp Minced garlic
1/4 tsp Pepper
1/3 cup Dry white wine such as Chardonnay or Sauvignon
Procedures
Cut fish into large cubes and thread onto skewers with nectarine cubes.
Mix oil, lemon juice, sage, garlic and pepper. Brush over skewers and barbecue over medium coals for 10 minutes or until done as desired. Makes 4 servings.
