Honestly, if it was just me, I wouldn't but Craig loves them. They're okay but not something I'd go out of my way for. I'll have to tell him about your method, maybe I'll like them more that way.I’m glad to see that you use parsnips.
Parsnips have become a neglected/forgotten vegetable.
When I was a kid we used to cut them into coins, cook them until tender, and then fry them like cottage fried potatoes.
