TAMALE PIE

1# Hamburger
1/3# Ground sausage
1 chopped onion

Cook all until onions are done, then drain.

Mix
1 Can stewed tomatoes
1 pkg. taco seasoning mix
½ tsp. cumin
1 tsp. chili powder
1 heaping tsp. minced garlic
Sliced black olives
Whole kernel corn

Put into a baking dish and top with lots of cheddar (Colby/Jack)

Topping
1 pkg. cornbread mix
1 egg
1/3 C milk (or creamed corn)

Pour/spread over the top of the casserole and cook according to the directions on the cornbread mix box
400 ° for 15-20 minutes until cornbread is done (clean knife test).
 
Bon Appetit had a Tamale pie recipe that used mole in the meat component. It was very good. I have all my Bon Appetits...slowly scanning them and getting rid of the magazines. Too much paper. I have stacks to go (I try to do two or three magazines/week).
 
CWS, I had to do that (the magazines, that is) with a couple decades of Gourmet, a few years of Saveur, and two beading subscriptions saved over five years. Not only a "too much stuff" thing, but talk about a fire hazard! For the food magazines, most recipes I can find on-line. The beading books I took out patterns and photos and fit a huge shelf's worth in a few file folders. But it takes guts to get rid of stuff!

The tamale pie? My husband prefers a sort of corn meal mush to cornbread, and some might like that if they don't care for corn bread (sort of like polenta). This is often his birthday meal request!
