Yesterday, Tuesday, May 20, 2025, I bought onions so made liver and onions. with mashed potatoes, and homemade applesauce. I've not really thought of dinner tonight....but am hoping we get back on track.

Last night was BBQ'ed pork chops from a local farmer and asparagus with a salad of baby lettuces and sprouts from a local farm with added campari tomatoes, red onion and fresh buffalo mozzarella. Yes I'm big on local products, lol.
 
I put a small piece of pork belly in the crock-pot and doused it with bottled Italian dressing, finished with a bunch 'o garlic and beaucoup chopped onions. Set it to LOW and let it do it's work.

We had air-fryer homemade French fries with it and polished off the Coconut Pecan Stupid Pie for dessert.

There's plenty of the entree leftover for tonight. I'll just create some more sides. Although Glenn certainly enjoys the fries. May make more of them.
