Shrimp and Bok Choy Stir Fry

Nada... can't cook while the munchkin is here. We/I did prep all the goodies. So I'll try to cook it before I have to pick her up tomorrow.

Pray the shrimp hasn't turned to mush.
I posted that yesterday but should not have worried. The picture is what I have left over as I didn't take a pic of my dinner bowl. Had it over some rice. This recipe was so simple after the prep.. oh m G.. from Elaine at China Sichuan Food. Here's a link to this particular dish - I've added some extra strips of carrots. Couldn't believe something so simple could be so delicious!
 
Yesterday I didn't eat, a few tastes at work, but that's just my job and it isn't actually eating. Anyway tonight was the first thing I've eaten today and it was beef tenderloin carpaccio with an arugula and red onion salad some evoo, parmigiana, seasoning and a little balsamic, very little.

Long day for me today. I went to the "big city" to run some errands and to have another manicure. I've decided I liked the first manicure so much I'm going to treat myself every few months.

Anyway, after being gone since before 9 a.m. until 4 p.m., I was tired and ever so thankful for leftovers from last night's meal. I added some sliced fresh tomatoes tonight that surely were tasty.

Almost finished the apple-cinnamon cake and we're looking forward to some new cookies soon.
 
I had some of the white bean and feta with quick pickled celery salad. I had a couple of smørrebrød too. One was a frikadelle garnished with lettuce, cucumber, and pickled red cabbage. The other two were sliced hard steamed egg. One had a few of the little Nordic shrimp and the other one had a couple of anchovies. Both also had lettuce and cucumber. I had a couple of pastéis de Nata for dessert. No pix, I was too hungry.
 
Avocado toast on dave's killer bread, air fried french fries (oilfree) with balsamic vinegar and ketchup.
Mint nice-cream w/cocoa nibs.
