Stirling thought he wanted his steak well done. I eventually figured out that he just wanted the texture not to have any hint of jiggle. Personally, I usually want medium rare. I would rather have steak cooked blue than well done. On one trip to Newfoundland I was in a resto where you sat a long table, with strangers. I ordered my steak blue. The guy sitting next to me looked at my steak and said, "Quick, call the vet. I think we can save it."
