if i pan sear my roast and then finish it in oven.how long will it take to get to med rare.

i know i put it in th eoven at about 325 but for how long to get to the desired finish?

It's best to use a meat thermometer. 135 is pretty much medium rare.

If you don't have a meat thermometer it's much harder to cook something to specific doneness. It depends on how big the roast is and what shape.

How many pounds?

ahh that would have been helpful :)

its just a wee one 2 lbs perhaps 2.5.
we havea meat thermometer. but i dont want to be jabbing it every10 mins

Since you are searing it off first, check it after 20 min. Make sure the thermometer goes into the center of the roast.

Take it out at 130 and let it sit for 10 minutes or so before you cut it.

thanks for the help, turned out yummie.
guess the roast was a bit bigger. took about 70 mins :ohmy: but i started early so it was all good:)
