I had been wanting a pot roast. Found a nice piece of chuck roast at the big box store. Made it with carrots, potatoes, celery and onions, and served it with scalded bread aka corn pone. What did the rest of you have?
I wasn't feeling great, so I heated a bowl of the pea soup I made yesterday and a potato and pea samosa with tamarind sauce. It was easy and I could tell that I had to eat.right.now. I had gone into the kitchen to start making a Danish dish that I had been looking forward to, but that didn't work out. The pea soup was even better today.
We didn't! Skirt steak fajitas, marinated for almost 8 hours with lime juice cilantro, garlic, onion, S&P, with roasted red bell peppers, onions and more garlic. Guacamole and sour cream.
We had repeat of Monday's meal and the garlic chicken was just as good, perhaps better, than Monday. Prolly because the herbs, etc. had a chance to mingle a bit. Definitely a keeper.
We had Little Debbie Christmas Cherry Cordial cakes for dessert. They are doggone good.
