It's going to be an epic lasagna. I'll take pictures when it comes out of the oven. This lasagna is two layers thick, with the following ingredients:
  • 2 24 oz. cans tomato puree
  • 1 6 oz. can tomato paste
  • 1/4 cup heavy cream
  • 1 whole white onion, minced
  • 6 cloves fresh garlic, peeled and minced
  • 1 1/2 tsp. dried oregano
  • 1 tsp. dried basil
  • 2/3 tsp. dried rosemary
  • 1/4 tsp. ground thyme
  • 2 lbs. ground beef, browned
  • 8 oz. fresh mozzarella, thinly sliced
  • 2 1/2 cups large curd cottage cheese
  • 3 layers lasagna noodles

The herbs shown are a starting point. I let the sauce simmer for thirty minutes, and adjusted the herbs until I was satisfied with the flavor. I didn't put sliced black olives into this batch, and no cayenne pepper, as on of my grandkids doesn't like hot, or black. Sheesh. I purposely over spice my sauce as the noodles, neat, and cheese dilute the herbs, and spices if I don't. It all just barely fit in the pan. It's set in a foil lined steel lasagna pan, sealed in foil on top, and sitting on a foil lined cookie sheet. It's baking at 350' F. and will bake for 45 minutes. The oven will then be turned off, and the lasagna left in the oven to remain warm until dinner time. Clean up will be a breeze. I'm definitely lookin forward to dinner tonight.

It's a good thing that pasta dishes are better the next day as I just was informed that there is a church dinner tonight, and My grandson wants to make sue I'm there. Now, I have to let that lasagna cool, and find room for it in the fridge. Finding room just might be a challenge. I'll melt some cheese on top tomorrow night as I'll be reheating it for dinner.
The pictures don't do the lasagna justice. It looks much better in real life.

Chief, that lasagna sounds good. Too bad I can't eat that kind of quantity of cooked tomato nowadays.

LT, those roll ups sounds interesting. How did you make them?

We had a very easy supper. Everything was ready made. We had some kebbe and some vegi samosas, accompanied by some tamarind sauce. Delicious and fun to have finger food for supper.

LT, those roll ups sounds interesting. How did you make them?

+1...sounds wonderful. I have a few lasagna recipes...in more recent years, I like to add a little fennel seed and use fresh (frozen) lasagna noodles.

Tonight, I'm making a batch of Turkey Skillet Pie but with ground chicken instead...so it will be Chicken Skillet Pie. ;)

Round One of leftovers tonight, pork chops for me and pot roast for Himself. That gave me time to make fancy salads. See that little cluster of green olives near the middle? Those are stuffed with almonds! [emoji813] They were a favorite of mine when I was younger, but I had not seen them for decades. My SIL and I went to a new Lidl that had recently opened near her house. I found them there, and promptly bought four jars. I'm down to my last 1½ jars...

Looking for something to make with rotis chicken...

The recipe said use 5 chix breasts, boned & diced, this is to serve 4
The recipe said use quality bacon, and why would you use any other kind
The recipe said use 2 cans cream chix soup and 2 cans chix broth
The recipe said use 1 box pasta-- size?
Other than an onion, no other veggies specified
A whole lotta monterey jack cheese.

Supprisingly this turned out pretty good, as long as the recipe was ignored.
Crumble the (quality) bacon and cook onion in bacon fat. I chopped some rotiss chix, and used spiral pasta, 1 can cream celery soup and some low salt chix broth and cheese until my arm got tired grating it. Top with cheese and bake until heated and cheese starts to brown, about 25 minutes. Did not get a vote of confidence to use this recipe again.

CG, Some time last year I thought I had found green olives stuffed with almonds. I bought them, because I think I remember liking them. When I opened the jar, I finally noticed that they weren't stuffed with almonds. They were stuffed with garlic cloves. My disappointment did not last past the first olive. :yum:

I too have to limit my tomato, also cheese. I'll be eating a small amount of lasagna, and filling upon summer squash, and salad. I tasted a scant tsp.of the lasagna this morning, as I just couldn't resist. It came out so very tasty, with just the right flavors, and texture. The family is in for a treat tonight.

All of the posts look like such great food. DC is such a wonderful place to get recipe, and meal ideas.
