Updated vegetable soup recipe.

I rarely use just water, as I find the soup to taste ' empty' . The broth kinda fills in the flavor voids
Maybe that's why I don't really care for certain vegie soups. I don't even bother to read those recipes like for Minestrone or Italian Wedding Soup.
there have been a few tho and a couple from DC members! But one from Seasons & Supper blog, Pork and Ricotta Meatballs with Parmesan Broth was to die for! Gotta make some soon!
 
I took the solid tomatoes out because they made it more like a stew.
Let me rephrase my original thought about the soup. If I was making a soup that used chicken stock and tomato puree, it wouldn't be for a soup that used mostly just summer vegetables. The dominant flavor of both those liquids I use in many many soup but is, again imo overpowering and diminishes the delicate individual flavors and freshness of those particular summer veg. It's actually one of the few soups where I don't use a stock as the base. But I would definitely add some type of whole tomato aspect if that was also in season, but not a lot. JMHO.

To me vegetable soup is: there is nothing to eat for dinner or lunch, open refrigerator, throw all available vegies in a pot, add water, bring to a boil, 15 minutes later done.
Ok, I am partially joking. Just partially. I do have favorite vegies to put into veggie soup. Brussel sprouts are one of them, but then I have to do before my wife see it. She hates them. To hide, I have to puree the soup, then she doesn't know.

I froze half of what I made so soup isn't as much a way to clear the fridge of items for me. Definitely planned, although still have leftover vegetables I might just eat raw.
