We tried a new recipe tonight, "Mexican beef and rice skillet". It was edible but great. Reminded me of a glorified Hamburger Helper something or other. Fresh avocado slices on the side seasoned with salt and lime.

I assume you meant "edible but not great."

I've had similar "Mexican" dishes, and of course, the once popular Taco Salad. Same thing, something decent to eat, but not something to write home about.

I was not really feeling inspired, so I defrosted a couple of "white wine and shallot" sausages. I cut a carrot, a parsnip, some sunroots, AKA Jerusalem artichokes and fartichokes, cut some thick slices of onion, and quartered some shrooms. I sprinkled cumin, smoked paprika, cayenne, onion powder, and EVOO over the veg and shrooms and mixed it all up. Then the sausages went in the pan and got a sprinkling of EVOO. I roasted that in the toaster oven and voilà, supper. It was pretty good. I have one sausage and some veg and shrooms left for another day.

Thanks! If you like fried green tomatoes, canning up some sliced green tomatoes at the end of the season is the way to go.

err, I meant the other stuff :giggle:
But I've never had fried green tomatoes. So shouldn't be so quick to judge.

Like everything else, there are good preparations and not so great. I like the breading to be on the thin side so that I can taste the tomato, but the breading MUST be crunchy.

About those cast iron skillets you are keeping for me, they make excellent FGT.
