Update:
The owner has found a new cook to come onboard. Arianna is a little older (not an apprentice) and has had some experience in kitchens. She has been in and out of the industry over the years, understandably prioritising her kids and family.
Her pasta is very good, even though our technique is different. I had to reduce my time there due to my health, and I am told she did struggle at first.
Arianna has settled in now, and I have been able to go back to an “as suits” schedule.
Of course, I am not going to be telling her what to do because she doesn’t really need me to. I did suggest that she pull back on the amount of pasta she is making for the mis.
She was making loads of it and freezing kilos every night. I’m okay with freezing some pasta at times, but obviously the fresher the better.
I’m sure her portions will be more balanced as she gets used to the flow.
