carabaccia, Tuscan onion soup with an egg
LOL, had to look that up - I was pretty sure the first time I read about carabaccia, the Tuscan onion soup, there was no egg. Sure enough! People are starting to add different things to it.
When I first explored it the biggest difference was the toasted bread with grated cheese was on the bottom and then the onion soup poured over it. That was my main take from it plus the type of cheeses used.
Nice taxy - glad I looked it up again.

I'm pretty sure I have posted about that soup here before. I have made it a number of times. It's a bit trickier for one, with the egg. I probably won't bother with the egg when I reheat what's left.
