Wednesday supper, 2025 January 29, what did you have?

I had a piece of chicken breast that needed to get used up. I also had half a packet of some Blue Dragon Chilli Coconut Stir Fry Sauce. So, I stir fried the chicken with some veg from the freezer and added the stir fry sauce. I served that over brown basmati rice. I really enjoyed that. Somehow, the second half of that package of stir fry sauce seemed hotter than the first half.

I did something I have been meaning to do. I weighed the pot that I was going to cook the rice in and wrote that down. I weighed the rice before I cooked it. I weighed the water. I weighed the pot with the rice, once it was finished cooking and subtracted the weight of the pot to get the weight of the cooked rice. I measured out one half of a cup of cooked rice for my supper. After supper, I measured how many half cups of rice were left. Now, I know how much cooked rice, by weight or volume I will get for a given amount of dry, raw rice and how much raw rice I need for a given amount of cooked rice. Well, I know for brown basmati. I imagine it would be same for other brown rice. I imagine it will be slightly different for polished rice.

Fried up my Poor Man's Weinerschnitzel. Gads, so good, tender, juicy. Reheated the vegies from the night before, yam, cauliflower, bok choy. Perfect.
Mixed the left-over egg whites and breadcrumbs together from the breading and threw them in the hot pan after removing the schnitzel. Cooked it by just the residual heat - tossed that on top of the schnitzel. Beautiful! I've always given that to my dog(s) before but now, without dogs to treat, decided to try and see if I was missing anything. Obviously I was as it was quite tasty!

@taxlady rule of thumb for a rice serving is 1/2 cup of cooked rice or 1/4 cup of raw. Rice, in general, doubles in size when cooked. Water measure differs of course, from rice to rice. Regular white is 1.5/or+ to 1 and with brown rice a wee tad more water.
 
I had some really good fish tacos in the hole-in-the wall bar next to my hotel. Julia was my server, and was a real sweetheart, so she got a big tip.

I have read those ratios before. They are not as accurate as I want. Also, I prefer weighing. If I am sharing a recipe with people in most parts of the world, it makes better sense to give it with metric measurements.

I cooked about 1 cup of raw rice. I got about 4 cups of cooked rice, not just double.
 
We tried a new brand of pre-made meals, Factor. The first one was a 50/50. The taste wasn't bad, though the zucchini needed salt. The beef bolognase with mini lasagna noodles tasted okay but Craig said it was more like carrot bolognase. Told him I thought they were trying to make it as healthy as possible. I made some garlic rolls using some brioche dinner rolls we got as part of a BOGO and most of the garlic oil leftover from the pizzas tuesday night.
