I would never use store bought ground beef for tartare. You need a premium quality beef fillet which you chop finely and then chop even more finely.
Done properly it’s excellent.
Old school restaurants used to make it table side.

I was referring to medium rare burgers. Burgers are something that most people make with grocery store ground beef. :rolleyes:
