Drizzly day.
Chicken soup over brown rice, topped with freshly grated parmigiano reggiano & pecorino romano cheeses.

I finally had enough spoons to make those hot chicken sandwiches I had been planning with the leftover roast chicken from the tray bake last Thursday. The gravy turned out a little thin, but really delicious. DH got shredded chicken breast meat on whole wheat bread and I got chicken dark meat on the bread. I served it with leftover veggies from that tray bake. Mostly it was the ones that hadn't gotten cooked enough last go. It was good and satisfying.
