It's the potato salad with egg that we bought at our local Amish market. :giggle:

It's got potatoes, egg, celery, sweet pickle, mustard, mayo, salt, pepper, a pinch of cayenne and a few sprinkles of pickle juice.
Sounds like my family's (from SE Texas) version. Lots of eggs and heavy on the mustard! Now I live 30 minutes from some Amish communities but never thought to try their potato salad.

The biggest thing about them is their size, which is generally small or smaller than a little finger on an average hand. Sweet pickles often point to the sweet, tangy flavor which comes from placing the pickle in a sugary brine. That being said, the sweet gherkins are perfect (and commonly) used in potato salad here.

Yes that’s more or less true. Fat finger size and anything above tend to be called Gherkins.
When they are very small, small pinky or less they are called Cornichons 👍

Cornichons here always tend to taste more tart than gherkins.

Extremely crunchy indeed. It's funny, I like pickles. But I don't like the texture of gherkins. They're almost too crunchy for my taste.
 
I haven't had a gherkin in years. But I do like them.
They were always the pickle set out on holidays with the black olives, carrots and other pre-dinner munchies. Probably because they could be eaten in a couple bites.

The only pickle I buy is a form of sweet pickle, bread and butter slices. I couldn't tell you if they come whole or not. They are always sliced lengthwise it seems. So they work well on sandwiches.

I'm not really a pickle eater. A jar will last me a year.
 
My current favourites are smallish gherkins, close in size to a cornichon but definitely what we’d call gherkins sized.

Ah, classic example of posting a reply against the wrong post! Oh well, never mind! This was supposed to be a reply against In a Pickle's post re Gherkins and Cornichons in case anyone was wondering.. :whistling

Doesn’t look very thrilling but it was a big hit because it’s vegan macaroni cheese which as anyone dairy free who likes macaroni cheese knows is very hard to emulate without the key ingredient of cheese!
It was enjoyed by Mr Pickle who doesn’t like vegan substitutes and it’s been requested again tomorrow. So I count that as a win.

The recipe will scare a lot of vegans off because some of the ingredients in the ‘instant powder’ are either unfamiliar or leaning towards UPF.

But if you can’t have dairy and love macaroni cheese whilst it’s not the same it really does scratch that itch!

 
If someone isn't vegan, but is lactose intolerant, there are plenty of cheeses that don't have lactose. If it's a dairy allergy, then that's a completely different matter.
 
True there are many, I buy a lot of them but that’s not what this recipe is about, it’s about speed and flavour. Vegan cheese sauces still require a lot of tweaking to make them palatable no matter how much vegan cheese you throw at them and they still rarely hit the mark for mac n cheese.

And she's celiac to boot. That's a double whammy there!
 
I realise since joining I’ve pretty much only posted pictures of messy looking comfort food, but the temperature here has dropped significantly so it’s due to continue for some time 😂

Southern breaded crispy chicken burger with shredded cucumber and satay sauce. The satay sauce was a good show, shame I can’t remember how many times I adjusted the end result or with what ingredients 😂

I never thought of 'shredding' cucumber to add to things like that! I'm more likely to have some cucumber on hand than lettuce. Although cucumber is also fairly rare. If I need a leafy green it is usually spinach. But this is great - use both! Thanks In A Pickle!

Cucumber is rare? 😵‍💫
It's a nice little extra texture and what ever sauce or filling you're using mingles with it nicely 😊

I particularly like it in sandwiches.
