What do you do with high quality toasted sesame oil?

I've never had any go rancid on me either. I do use it frequently, but Ive also had bottles for over a year and still taste fine. sometimes refrigerated, the current bottle out on the counter.
 
If you have sous vide, you could do a sesame oil poached - well anything, but tuna would be great. Lightly season the meat, rub with sesame oil. Bag it, add extra sesame oil, but you won't need a lot, a few tablespoons should do. Seal it up and "poach" it in oil in the sous vide. Remove, sear if you like, and I would like.
