What have you had for lunch lately?

I have leftover greek rice (made with onion, garlic, orzo, lemon juice, stock) from last night's dinner and I think I will heat it up with some canned salmon, edamame, some pickled radishes and maybe chili oil. It's only 8am and all I can think about is this lunch that I'm planning to make...
 
@Aunt Bea's Pizza Sauce reminded me of the Impossible Pizza recipe (Bisquick)...so I made one for lunch today. I consider it more of a "casserole" kind of dish, as opposed to a true pizza...so there's Fontina and Cheddar on top... ;)

I remember impossible pies!

 
Had a Mr Noodle Beef flavour soup. With chiffonade of baby napa & baby spinach, sliced radish, red pepper and a dash of Soy Sauce.
Microwaved in a 4 cup measuring cup, 2 cups of water with all the add-ins brought it up over the 3 cup mark.
Why dirty more dishes - ate it right out of the cup - burnt not only the roof of my mouth, my tongue but also my bottom lip. 👀😒

Half the pork tenderloin cooked yesterday for supper that I was too tired to eat. Probably have the other half tonight.
2nd time I've made this and it is certainly on the top of my list - Company worthy for sure. The pears and red onion sauce were perfect with it.
This particular tenderloin was fat. That is half of the half I cooked. In other words getting 4 meals out of one tenderloin. 🤩

Absolutely - it is from Seasons and Suppers (Canadian gal). I've got it on CMT, herre's the link Pork Tenderloin with Pears.

I cut my tenderloin in half to begin with. Other half for another recipe. I only did 1 bosc pear. You really need a firm pear and this one held up beautifully - in the pan, in the oven and even reheated the next day.
I reduced the Balsamic Onions too (by half). Worked fine.

This is my 8" Cast Iron - fits in my Toaster Oven perfectly. You can see the onions peeking out from under.
She has helpful hints and great pictures.

I don't think it was that the site blocks thru links. I think it is because you used the link from the address bar, instead of from the share menu. If it is blocked from thru links, it will say so in the share menu. It looks like this when that is the case:

The photo is not the prettiest, but the chicken salad was delicious. It's my grandmother's recipe. For this, I used 1/2 of a Costco rotisserie chicken, roughly chopped in the food processor. To that, 3 hard-cooked eggs, 3 stalks of celery, 10 sweet midget pickles, 10 olives with pimento, and one small green onion - all roughly chopped. I added salt, pepper, and a bit of Miracle Whip (cuz mayo is not the same and Gma used MW.) Costco also had some croissant loafs which was very tasty along with a few baby salad greens.

I cannot resist getting rotisserie chickens at the big box stores, and my sweetie has balked at another round of chicken and noodles. (I may make chicken soup or a chicken pot pie with the other half though.)
