What have you had for lunch lately?

I went food shopping this morning. So brunch when I got home was premade bistro spinach salad with Dijon dressing, Matlaw's small/appy size clams casino, and a slice of the strawberry tart I made yesterday.

What is the custardy filling you put in your tarts? It looks amazing!

Those jarred mandarins are in a light syrup, very light.
I always drain them well and are not too sweet,
"but jussst right!"

And, what's bg?

Blood glucose. I am a diabetic. Somethings throw my bg high. Somethings do not. Like pasta typically does not rock my blood sugar. Let me eat a bit of rice though... :ermm:

For lunch today, I had potato soup, cheese, sausage, crackers, and an apple. To drink, sugar free (Crystal Lite) Lemonade.

Wednesday is cheat day for me, I usually get the special at the Livestock Sale Barn Cafe. I had two pulled pork tacos in corn tortillas with a delightful coleslaw made with chipotle sauce and pico, pork chili and black beans. Ice water for a beverage.

As for the too sweet mandarins, I rarely eat sugar of any kind and found out they were just overly sweet for me now. Since my bypass surgery I have lost 45 pounds (10 more to go), plan on keeping it that way.

That is awesome, PF! 45 pounds equals 180 sticks of butter lost from your frame!

We just sat and sipped, ate and chatted away the afternoon, lovely!

I brought home a piece each of Carrot & Chocolate Mouse Cakes

Trader Joe's Spizzico di Pizza
Hot Cherry Peppers stuffed with Sharp Provolone Cheese & Prosciutto
(I finally figured out how to make them, DH is over the Moon!)
Chopped Salad ala DH (no leafy stuff ;))
and since I have a difficult time tolerating Anchovies,
I just put the entire jar out with a small cocktail fork for him
to serve himself :LOL:
He put some in his Salad as well as atop the mini Pizzas,
he's a happy camper.

:LOL: That's so funny, K-Girl! I'm not a fan of scallions, but Himself could eat them on salads, in relish trays, etc. If I make a relish tray, I just serve scallions the way Mom did for my Dad. After trimming them, she'd put them in a juice glass, fill the glass with crushed ice, and set it down in front of Dad's plate. That way none of the onion juice gets all over the rest of the crudités. :LOL:

Today's lunch was oh so simple, and delicious: a french omelet wit 2 slices Kraft American chees placed on top just before sliding and folding from the pan to the plate, letting the residual heat from the egg melt the cheese, followed by a Chobani mixed fruit yogurt, to which I added fresh, sweet blueberries, and a tbs strawberry preserves. Home made rice milk to rink, with a hint of dark maple syrup to drink..

Yu[, it tasted very good, and was super easy to prepare.

I finally caught the Sushi Man
at our local green grocer aka Sprouts Farmer's Market :)
DH has been asking for his Sushi tray to be all Salmon
rather than half'd with Ahi Tuna.

Something new to us two ... I saw this in the freezer case at
the megamart and thought DH would like this.
Some Spicy Brown Mustard on the side for dippin' and
lunch is served!

I've been making home made pigs in the blanket with full sized hot dogs, or kielbasa, in fresh made, or frozen raw bread dough for years. They are a favorite. You can also put cheese, and chili in them to have chili-cheese pigs in the blanket. You simply roll out the dough, place in the ot dogs/Kielbasas, and other fillings. Cut the dough large enough to encase it all, brush with milk, and bake to golden brown. Of course you do have to let the dough rise with the sausage in it before baking.

Never tried it with pretzel dough before. With yellow mustard, it sounds really good.
