I live in the Heartland of the United States
I put a nice big pot of beef, barley and vegetable soup on to cook a few minutes ago. Gonna let the beef and barley get acquainted for a while before I add the veggies.

We'll have some garlicky buttered rolls to sop it up and a Klondike bar each for dessert.

Looking forward to the first soup of the season. Coldish and gloomy here so it's just the ticket.

What is everyone else having?

Baked beans, broccoli and white sauce, cubed potatoes/onion/mushrooms with white sauce. So comforting.
 
I still have about half a loaf of Artesano thick sliced bread I was going to turn into French toast, but I have no bacon or sausages, I think French toast with eggs is redundant, and I didn't feel like making all that French toast and not having anything to eat with it, so I improvised. I had a Traditons meal of what they called a strip steak shaped beef patty that included spinach and diced potatoes in the freezer. I sauteed the potatoes in olive oil, scrambled a couple of eggs in butter with the spinach, and ended up with fake steak, eggs florentine, and country hash browns. My belly is happy and nothing was wasted.
 
I have a rack of baby-back ribs in my garage refrigerator I took out to thaw a few days ago. I will cook that in the oven later. We generally don't eat dinner until around 10 PM or later, so I won't start it until around 7 or so (if it's done early I will just turn off the oven and let it rest--it will be wrapped in foil so it won't dry out). I think mashed potatoes with gravy, and salad to go with.

I haven't eaten breakfast yet, LOL! That sounds pretty tasty. I just finished a cup of tea and will have my coffee next, then food. Thanks for the reminder!
 
I'm deciding what to make. I'm not up for dealing with the whole chicken, so it won't be the Parthian chicken tonight. I was planning on making a big salad with protein. But, it's cold and damp and I want something warm. I'll probably have a bowl of the soup I still have in the fridge and decide what to cook when I am less hungry.
 
Finally did the stir-fry, shrimp, mushrooms, sweet red peppers, bok choy and accidently added too much sauce - was a liiitle on the salty side. Edible but am filling my water jug to the brim.
With more extra rice so as to hardly find the goodies - perfect.
 
I had leftover seafood cannelloni for "breakfast" (a little after 4pm) and some orange chicken and low mein noodles from Panda Express for "lunch" about 30 minutes ago. Normally I like rice with my Chinese takeaway but Panda's rice is never good. I sometimes get their supergreens, which is cabbage, kale, and broccoli. I like that better than the rice.
 
Da BEARS won! 💖 I wanted something that went with watching football, so assorted crackers and melba toast, some dried tropical fruits and semi-dried figs, fresh apples, blueberries and tiny tomatoes, pork and liver pate with mushrooms, cream cheese with homemade pepper jelly, serrano ham (not part of what I bought today,) a really creamy herbed cheese roll from Lidl, and a strong cheddar- based cheese from the farmer's market. For "dessert", we split a chocolate bar with pistachio filling (on the plates at the bottom.)

I was inspired by .40 to get my frozen tamales out, separate them into serving size packages, and put back in the freezer. I kept two tamales out to eat tonight, with some chili sauce and cheese.

I wanted to do a nice photo, so I used the studio lights, but both batteries for my Nikon D4 were dead, so I had to use my iPhone, no tripod. Oh well, I had good intentions. :rolleyes:

3 tablespoons unsalted butter
4-5 golden delicious apples, peeled, cored and quartered
3 tablespoons brown sugar
heaping 1¾ cups all-purpose flour
3 teaspoons baking powder
2 large eggs
½ cup sugar
2 teaspoons vanilla extract
½, teaspoon ground cardamom
¾ cup milk
thick or whipped cream, to serve

Preheat the oven to 350°F.

Melt the butter in a heavy ovenproof or non-stick frying pan (measuring 9 inches across the
top), over moderate heat, add the apples and fry until golden brown on all sides, about 10 minutes. Sprinkle with the brown sugar.

Sift the flour with the baking powder and a pinch of salt into a bowl. Combine the eggs with
the sugar, vanilla extract, cardamom and milk in another bowl and whisk until smooth. Fold into the flour mixture until just combined.

Spoon over the apples in the frying pan and bake 30 minutes or until a skewer comes out clean. Turn out on to a flat plate and serve hot, with cream.

Serves 8
