It was Steak and beers last night 
3 tablespoons unsalted butter
4-5 golden delicious apples, peeled, cored and quartered
3 tablespoons brown sugar
heaping 1¾ cups all-purpose flour
3 teaspoons baking powder
2 large eggs
½ cup sugar
2 teaspoons vanilla extract
½, teaspoon ground cardamom
¾ cup milk
thick or whipped cream, to serve
Preheat the oven to 350°F.
Melt the butter in a heavy ovenproof or non-stick frying pan (measuring 9 inches across the
top), over moderate heat, add the apples and fry until golden brown on all sides, about 10 minutes. Sprinkle with the brown sugar.
Sift the flour with the baking powder and a pinch of salt into a bowl. Combine the eggs with
the sugar, vanilla extract, cardamom and milk in another bowl and whisk until smooth. Fold into the flour mixture until just combined.
Spoon over the apples in the frying pan and bake 30 minutes or until a skewer comes out clean. Turn out on to a flat plate and serve hot, with cream.
