What is Your Favorite Cheese?

It's weird, I have never drunk goats milk. But I've often had goat butter, which I quite like, and many times the cheese, but not the milk.
 
does it have to be a fancy cheese? is mozzarella OK to say?
Mozzarella is special in its ability to melt, and the milkiness and mildness in flavor. The texture cold and the texture warm or hot are different than many cheeses. It even stretches. I think mozzarella is pretty fancy. It's one of the most used cheeses due to its use on pizza.

Funny story. Many years ago, my band toured NATO military bases in Italy with the Department of Defense. One such base was close to Naples and, as usual, we were assigned an American driver to take us anywhere we wanted to go. The driver in Naples was named Jake and he was a good ol' boy from the deep south... Mississippi as I recall.

Jake said "What do y'all wanna see?" Not being familiar with the area, we left it completely up to him and so he spent the next few hours showing us around the area. Then he asked "Do y'all like cheese? There's a store just up here I like to go to. They have the best Mozzarella!" We all kind of looked at each other as if to say "that's just flavorless cheese you put on a pizza."

So we went to the cheese shop. It was fantastic. They had all kinds of Italian cheeses but the owner's pride and joy was his artisan Mozzarella, which he and his sons made by hand from water buffalo milk. After a taste, we bought a half dozen balls of this "Mozzarella di Bufala" to take back to our barracks.

We made complete pigs of ourselves. To this day, that was some of the best cheese I have ever tasted. We would just put a little olive oil and a sprinkle of salt on it. It was creamy, mild, and delicious. 🤤

So yes, Mozzarella can be pretty fancy too.

@Steve Kroll Awesome experience! It would be wonderful if we could all experience it like you did. Mozzarella is one of those cheeses that is heated and stretched, not too much not too little, a very challenging cheese to make. It sounds like you've had the best of the best. Mozzarella is luxurious fresh instead of aged, or refrigerated for very long, or frozen.

The Mozzarella di Bufala Compana that I buy is (supposedly) flown in every week from Italy. I rather believe it - it really tastes like no other. By the end of the week most of it is sold and what's left goes on for half price. You can definitely tell the difference in taste 5 days later. At $13.00 for about 200 gr (not sure on the weight) it's on the expensive side.
 
that's prob why i chose it. believe me, when we need hard cheese, i go to the cheese showcase and am immediately overwhelmed.

@caseydog Is that one very large "island" of cheese or even more?

The first two photos are opposite sides of a big Island with people in the middle. The third photo is another display case next to the big island, between it and the wine section.

To the right of that display case is the store's Deli.

That looks exactly like my local Fortino's. Another Fortino's just maybe 10 minutes away is probably even bigger. All our grocers here have very similar displays of various sizes. But I would say those two are the largest. ... Yup - a lot a cheese!
