I found Biscoff cookies on sale at Walgreen's of all places, and thought, "wouldn't that be tasted with some Ice Cream?"
AH YUP!!
I layered crushed cookies and vanilla Ice Cream, what a home run! I knocked it outta the park with this one!!!

Crust-add all to food processor and blend until it sticks together. Let it be on the dry side, the filling is more moist.
1/2 cup date paste
2 T peanut butter powder
2 t. vanilla
1 and 1/2 cups oatmeal
A tablespoon or two of almond milk to help it stick together.
Press into a small 7 inch casserole or pie pan.
Filling--add all to the food processor and blend at least 3 minutes until silky smooth.
1/4 cup cocoa
1/4 cup sucanat sugar (or any dry sugar, like granulated or sugar substitute)
1 package 16 oz silken tofu, drained
Spoon into crust, refrigerate 2 hours
Serves 4. The crust is chewy and sweet, the filling silky and chocolatey.

but when we do, I do it up!
I made Hershey's Best Brownies,
sans the Creamy Frosting this time (DH loves that!)
topped with Mint Chocolate Chip Ice Cream
and Hershey's York Peppermint Sundae Syrup
