Whats for Dinner, Sat. May 5

Oh my, what a food day it was - and there was plenty for gate crashers...in fact a couple of the neighbors did just that! Just as well, I sure didin't want that much Flan leftover in the house :)
 
last night i made "braised tofu with peppers and onion" served it over rice...mmmm it was good;)
I also made a "Pineapple upside down cake" but we havn't even tried that yet:( (i made it far to late at night;))
 
In honor of Cinco de Mayo we had Margaritas, followed by Chicken/Spinach Enchiladas (adapted from a Martha Stewart recipe) with Spanish Rice & Refried Beans.
