What's for dinner, Saturday, March 25, 2023?

We had a from the grocery/freezer meal. P.F. Changs vege egg rolls and Mongolian beef, with pantry ramen. It was a pretty darn good meal.

Flap steak with mushrooms and capers in a red wine Dijon sauce. With roasted yellow beets and asparagus.

DH went out to supper with a friend. I am having postdrome from the migraine and not really up for cooking, but I did make myself a scrambled egg. I had it with a toasted, whole wheat, English muffin. Not long after I finished that, I went back to the kitchen and made a couple of sandwiches on Wasa crisp rye bread. One was chicken and the other was gouda, plus some garlicky, green olives. That hit the spot.

Mustard greens w/veggie brown rice and 1/2 a meal sized salad.
Pear and blueberry bread.

Nothing fancy. Progresso soup as we clean up food inventory, and BLT sandwiches on sourdough bread because...well, bacon!

A crunchy romaine salad with blue cheese dressing and oven baked wings ‘n’ things.

I’m amazed and impressed by how well the three packs of hydroponic romaine lettuce stay fresh and crisp for weeks.

I wish the pecan shortbread cookies lasted as long as the romaine.

DH requested his favorite "diner" meal..."chopped steak" (burger patty) with mashed taters (I did a sour cream & homegrown dill version), smothered in gravy and a side of veggies (peas). I was pleased to make something simple, as I needed to do some prep for tomorrow's (now today's) dinner to come...Sauerbraten + Red Cabbage, etc.

I made a quiche Lorraine, and we had celery and carrot sticks and olives on the side. We both enjoy quiche!

Oven fried Catfish with Cajun spices, roasted potato wedges. One of my favourites!

Was a little heavy handed with the Cajun jar but luckily it was on top of the crumbs - rescued by a scrape of the fork!

Bad cook - (but in her defense it was really late?)

I made an eggplant and tomato hotdish out of a Middle Eastern cookbook. Very tasty and healthy. Served with brown rice.
