I made a Danish broccoli salad with bacon for supper. We had it with wholewheat baguette. It's surprisingly good.

It was a busy day. I'm making a scaled down version of Chilaquiles. Tortillas, eggs, cheese, done...

NOTE: If one visits a fast-food restaurant, near a high school, at lunchtime...in the PNW, one can spot the "city kids" vs the "farm kids" just by looking at shoes! Here, kids are bused to school. Picked up at their door and dropped off at their door. Pristine sneakers are the city kids. Dusty, well-used boots are the farms kids! :-p
 
There was an article in NPR for making Sweet potato avocado 'toast'...but it was just slices of sweet potatoes, no bread involved. I made that yesterday and it was a 10 out of 10 for us.
2 large sweet potatoes, boiled until just about done, slice into bread slice thicknesses, bake in the oven on parchment at 350 deg F for about 20 minutes, to dry it out a little. Poke holes in them with a fork so things stick to them.
Top with: mashed avocado
a little salsa
fresh chopped tomatoes
fresh chopped parsley
fresh sliced green onions
pumpkin seeds (or chopped walnuts)
broccoli sprouts
Serve the potato slices hot, with room temperature toppings. Delicious!
