Here's my plan for tonight. I've never made it but it sounds delicious!:chef:

A change in plans here tonight. I got on the scale again, and I'm still down the 30 lbs. I lost in less than two months when I was cuckoo over this dang pandemic. I want those pounds gone forever so this low carb meal will be for tonight. It also sounds really delicious. I'll be doing ours with "pounded" boneless skinless thighs and we'll have loaded salads, thanks to the SC.:wub:

...Still not a bad way to celebrate my 70th birthday.
I checked the calendar. I remembered that it was Tuesday. I was all set to start your birthday thread in the wee hours later. Well, you know your birthday, so I'm not going to argue. [emoji38] Obviously my rememberer is wrong. I'm glad you ended up with an enjoyable dinner. Happy birthday, taxy!
 
We had fancy salads ( butter lettuces and spinach, prociutto strips, blueberries, filberts, feta cheese), boneless pork chops, sauteed apples, and steamed broccoli.

While that sounds pretty good, DH isn't a fan of asparagus. This one, from that link, sounds right up my ally.

With all the "low carb" recipes I've made over all these years, this one is my favorite. It's also in my top ten favorites with loaded carbs. I followed the recipe exactly, although I used pounded flat boneless skinless thighs, and added a handful of grape tomatoes on the top before roasting it at 375 (convection roast) for 35 min. Everything in it was perfectly cooked, and the popped little tomatoes were colorful and very pretty. Take a look see...
Souschef was a happy camper, and next time I may include some Angel Hair Pasta on his plate for my man. ;)
The killer tasty sauce at the bottom would be perfect for pasta.

Thanks Kgirl...it was just ever so slightly "creamy", and your man will never know the Ranch Dressing is in it! ;)

Not on your life!
DH can smell Ranch Dressing a mile away and starts to back away, "Eewwww! Get that away from me!" If I want Ranch on my Salad, I have to go eat in the kitchen :LOL:
Nah, I'll have to wait till I can clear some space in the deep freeze so that I can make one serving for today and the other for another day. Right now, I've got both freezers packed to the brim! :rolleyes: I wouldn't say I've been hoarding, I simply find alot of good deals ;)
 
What kind of salad dressing does he like? I don't see why you couldn't use something else with lots of flavor.
The best part of this recipe for me, is it only has 4g of carbs per serving. :ohmy: Peoople who don't like asparagus, could use something else too. Everybody loves BACON!!

Now-a-days DH prefers no dressing, just S&P, Dried Oregano and Garlic Powder, that's it. He likes just diced Tomatoes, Cucumbers and Sweet White Onion, no lettuce please, sometimes he'll do diced Radishes and Sweet Bell Peppers. I like to make big entrée Salads in the Summer-time for supper, he'll tolerate a splash of EVOO on a nice Grilled Chicken Greek-Inspired Salad.
