Steak Diane tonight, brought up to temp on the smoker, and then pan-seared to finish. I used brandy in the Sauce Diane and finished it with buerre manie to thicken and gloss.

I made a Danish dish, "hakkebøf med bløde løg og brun sovs", which means hamburger steak with soft onions and brown gravy, except my gravy wasn't brown. I had it with White bean, feta, and quick pickled celery salad. It was good. This recipe is a keeper, albeit it will be tweaked. One of these days I will make some browning, so I can make gravy like this one, brown.

We made zucchini and blueberry bread today. Dinner was tortilla chips and no-cheeze sauce, apple sauce, and stir fried veggies.
Snack: peanuts salted in the shell
Very interested in your no-cheeze sauce.
Did a search to see if there was a recipe posted but found nothing.
Would you mind sharing what ingredients that involves?
 
I've never seen that pasta here. I'd have to substitute something like rigatoni.

Rigatoni works well. I have some paccheri at the moment and I have large rigatoni that look similar. I look at quality when I select pasta and when I spotted the paccheri, the quality was quite evident so I bought it but generally I use the large rigatoni in it's place. Slight differences but most wouldn't be able to tell.

I use 3 no-cheeze sauces off the top of my head but this one is made with roasted red peppers and we make mac and cheeze with it as well as nacho no-cheeze sauce. Other recipes may use nuts (high in fat) or fats (like coconut oil) but we want to eat low fat and it works well for us.

(hint: to find a no fat plant based recipe, search google "vegan recipe no oil" and the type of recipe you want-like 'casserole pinto bean' or 'no cheeze sauce') Since this is made of vegetables and grains and is low fat, eating it means no guilt and you can have a cup of sauce. The major ingredients are rolled oats and red roasted peppers. I make this sauce by blending it in a blender then thickening it by cooking it on the stove.
