I baked off this half recipe of King Ranch Chicken Casserole earlier this afternoon for my linner (late lunch/early dinner)

For the Coconut component, I had a piece of this

Lentil soup with lemon and salt. Mint nice-cream. He had ww macaroni with red pepper 'cheeze sauce' with little broccoli trees and tiny spoon sized tomatoes which ended up looking like christmas red/green/white for a meal. He had zucchini bread for dessert. We canned tomatoes today so not much other stuff in the kitchen.
 
did manage to make some coleslaw to go with mine.
Actually have some coleslaw in the fridge but never thought to get some out. 😕 Put too many onions on mine, which I now layer as you, with the salmon last, to hang on to everything.
Onion gave me a belly ache for quite some time.... but it was delicious while eating!
I did forget some fresh dill which I have. I did finishthe deviled quail eggs with those tiny sprigs of dill - very nice.

I also added some Chili Oil to the Crispy Chili - about a teapoon. Gave it a really good stir and now letting it sit in the fridge to blend. will try it soon.
 
We had penne pasta with a hot Italian sausage sauce made with garden veggies. Three kinds of peppers, two kinds of onion, mushrooms, okra, garlic, and spices. It was really yummy. Maybe the best Italian sausage sauce I have ever made. And I will never be able to recreate it because I kept tossing things in until it was what I wanted. A bit of wine. Some herbs. Bay leaves. A frozen bit of tomato paste, etc. Topped it with shredded parm.

Hah! I was thinking the same thing.
And I came so close to adding garden grown (not my garden, but somebody's) peppers in mine, too. But I figured the extra sugar I added made it sweet enough. And it was. It reminded of a bar/diner I used to go to. The business is gone, but their sweet sauce is offered for sale in some stores now.

I've been meaning to ask you what you think of the crispy chili. What do you think of it? Correct me if I'm wrong, but didn't you get some recently that was NOT Laoganma?

Correct, I did get some that was not LaoGanMa. Nor was it spicy in the slightest. You could have chewed on a whole Tablespoon and maybe notice a tiny bit of heat after swallowing - if you really thought about it.

So yesterday, as I mentioned, I added a good teaspoon of Chili Oil and stirred it in. I've not tried it again yet but hopefully it will have settled the problem.

I will let you know when I do and what the results are.
