IMO, you are doing everything properly. And your skillet looks great. I wouldn’t worry about the residue. Seasoning is polymerized fat so it will give that off.

No. I don’t usually take the skin off any sausage. You can though, for things like soup or some kind of fry-up.

Food goes bad well before it starts st smell bad. So if it smells, definitely throw it away. But if it doesn’t it still may make you grotesquely sick.
